Chemical Changes in Color of the Carotinoid in Carrot

Abstract
|
|
|
In this experiment the content of the fat and the separated carotinoid in carrot are determined by chromatography, and carrot the chemical characteristics are compared with one another.
The results are as following.
1. The refuse percentage of carrot is about 3.2%.
2. The total crude fat of carrot is 0.101g% and it is mostly contained in its epidermis.
3. The total carotinoid of carrot is 0.92%.
4. The carotinoid of.the crude fat isn¢¥t wrecked with the saponification.
